ROSE’S Mango Pickle

Ingredients

  1. Mangoes, 20 kg
  2. Mustard seeds, 1/2 kg
  3. Fenugreek seeds, 1/2 kg
  4. Vinegar, 3-4 bottles
  5. Chili, 3/4 to 1 kg
  6. Sugar (white), 1/4 kg
  7. sunflower oil, 3 liters
  8. salt, 1/2 kg for washing
  9. turmeric, 1 tablespoon – 4 tablespoons

Equipment

  1. Cooking pot – aluminum
  2. Serving spoon
  3. Cooking stove
  4. Bucket
  5. Knives
  6. 70 jars
  7. Seals
  8. Labels
  9. Working table

Procedures

  1. Cut the mangoes into small pieces and store them in a large container for 1 month.
  2. When processing take the mangoes from the large container, wash them with salt (for 20 kg of mangoes you add 1/2 kg of salt).
  3. After washing the mangoes with salt three times, place them on a shelf to dry for 2 hours.
  4. Boil the jars for 30 minutes to sterilize them.
  5. Leave the jars to dry.
  6. Wash the lids with salty water.
  7. Leave the lids to dry until the time for packaging (don’t leave for more than 2 hours).
  8. Put oil in the pan. Heat it, then leave it to cool.
  9. Add turmeric, chili, sugar, fenugreek and mustard seeds to the mango pieces and mix well.
  10. Add oil and vinegar and then mix again.
  11. Pack the mango pickle into jars.
  12. Seal the jars.

Share the joy of accomplishment with the UMANGU Women’s Group from Ngurdoto village, Arumeru District, Tanzania! The group processes and sells mango pickle, and their product is gaining popularity among local consumers.

With training in food processing and marketing from the World Vegetable Center’s Postharvest Project in Tanzania, the group improved their packing practices and labeling methods. They now produces consistently wholesome and tasty pickles in well-sealed glass jars with attractive, colorful labels.
